Italian Chili

1 lb. Italian sausage, casings removed

1 lb. ground beef

2 medium onions, chopped

2 jalapeno peppers, chopped and seeded

3 cloves minced garlic

1/4 cup flour

3 tbls. chili powder

2 tsp. cumin powder

2 tsp. basil

2 tsp. oregano

1 tsp. salt

2 cans undrained tomatoes 28 oz. each

3 tbls. worcestershire sauce

1 1/4 tsp. tabasco

2 cans red kidney beans 15 1/2 oz. each

In large pot, cook sausage, beef, onions, jalapeno peppers, and garlic till meats are browned, and the rest is tender. Drain. Stir in flour, chili powder, cumin, basil, oregano, and salt. Cook for 1 minute. Break up tomatoes and add to mixture. Stir in worcestershire and tabasco. Cover and simmer for 1 hour, stirring occasionally. If mixture seems too thick add some water. Stir in beans and heat till it's hot. Serves 8.

Texas Chili

3 lbs. beef stew meat, cut in small cubes

1 cup chopped onion

1/2 cup chopped green pepper

1/2 cup chopped red pepper

3 cloves garlic, minced

2 cans tomatoes undrained and cut up 28 oz. each

1/2 cup water

1 12 oz. can beer

1 can tomato paste 6 oz.

5 beef bouillon cubes

12 rellenos peppers, chopped and seeded

1 tbls. cumin powder

2 tsp. oregano

2 tsp. grape jelly

In large pot brown beef. Add onion, green & red peppers, and garlic. Cook and stir till tender. Add remaining ingredients. Cover and bring to a boil. Reduce heat and simmer 1 1/2 hours, till meat is tender. Serves 12.

Chili Rotini

1 1/2 lbs. ground beef

2 cups chopped onion

2 cloves garlic, chopped

1 Hot banana pepper, seeded and chopped

1/2 tsp. ground cinnamon

32 oz. V8 vegetable juice

2 cans kidney beans, drained, each 15 1/2 oz.

Cooked Rotini

In large pot, cook ground beef, onions, and garlic, till beef is browned. Drain. Stir in banana pepper and cinnamon. Let cook for a couple of minutes, then add the V8 juice. Boil, then reduce heat to simmer for 1/2 hour. Stir in beans. Cover and simmer till heated. Serve over rotini. Serves 10.

Tropical Chili

1 20 oz. can pineapple chunks

1 can whole tomatoes cut up, 28 oz. can

1 can tomato paste, 6 oz.

1 4oz. can green chiles, diced

2 medium onions, chopped

1 sweet red pepper, chopped

2 cloves garlic, minced

1/4 cup chili powder

3 tsp. cumin powder

2 jalapeno peppers, seeded and chopped

1 tsp. salt

2 tbls. olive oil

2 lbs. cubed pork

Drain pineapple and tomatoes, reserve juices. Combine juices in bowl with tomatoes, tomato paste, green chiles, 1 onion, red pepper, 1 clove garlic, chili powder, cumin, jalapeno chiles, and salt. In large pot, heat oil and brown pork. Add the remaining onion and garlic. Cook till onion is tender. Add tomato mixture to pot. Cover and simmer 2 1/2 hours. Stir occasionally. Add pineapple, cover and simmer 30 minutes more. Serves 8 to 10.

Olive and Raisin Chili

2 tbls. olive oil

2 lbs. cubed pork

1 medium onion, chopped

1 medium green pepper, chopped

2 cloves garlic, minced

2 red serrano peppers, seeded and chopped

1 tsp. paprika

1 tsp. salt

1/2 cup sliced green olives

1/2 cup sliced black olives

3 tbls. juice from green olives jar

2 cans kidney beans, 15 1/2 oz. each

1 1/4 cup water

1/2 cup raisins

1tsp. tabasco sauce

In large pot, heat oil, add pork and brown. Add onion, green pepper, garlic, serrano peppers, paprika, and salt. Cook till vegetables are tender. Stir in olives and juice. Cover and simmer 1 hour. Stir occasionally. Stir in beans, raisins, water, and tabasco. Cover and simmer 1/2 hour. If too thick add more water. Serves 8.



Turkey Chili

2 1/2 lbs. ground turkey

2 tbls. chili powder

1 tbls. oregano

1 tsp. cumin

1/2 tsp. salt

1/2 tsp. celery salt

2 cups chopped and peeled tomatoes

2 cups chopped onions

4 cups water

5 cubes beef bouillon

2 tsp. garlic, minced

1 tsp. tabasco sauce

6 whole jalapeno peppers, seeded and chopped

1 can pinto beans, 16 oz.

In large pot, combine turkey, chili powder, oregano, cumin, salt, and celery salt. Stir, cover , and cook till meat is browned, stirring occasionally. Stir in remaining ingredients except for beans. Bring to boil and simmer 1 hour. Add beans and simmer 30 minutes more. Serves 6 to 8.

No Meat Chili

1 tbls. margerine

1 medium onion, chopped

2 stalks celery, chopped

1 green pepper, chopped

1 yellow or red bell pepper, chopped

2 cloves garlic, minced

2 tbls. chili powder

1 can stewed tomatoes, 15 oz.

2 cans kidney beans, 15 oz. each

2 cups water

2 tbls. worcestershire

In large pot, melt margerine, then add remaining ingredients. Cook and stir often for 30 minutes. Serves 6.

Summer Chili

2 cans drained kidney beans, 15 1/2 oz. each

1 can tomato sauce, 8 oz.

3 cloves garlic, minced

2 cups chopped onion

2 tbls. olive oil

1 cup chopped celery

1 cup chopped carrots

1 cup yellow or red bell pepper, chopped

1 can chopped tomatoes, 15 oz.

1 tsp. cumin

1 habanero pepper, seeded and chopped

1/2 cup red wine

1 tsp. tabasco

In large pot, combine oil, garlic, and onions. Cook 5 minutes. Add celery, carrots, and bell peppers, and cook 10 minutes. Add kidney beans, tomato sauce, and remaining ingredients. Cook 30 minutes. Serves 6.

Just Chili

1 lb. ground beef

1 stalk celery, chopped

1 tsp. garlic powder

1 tsp. crushed chiles

3 cups tomato juice

1 green pepper, chopped

1 medium onion, chopped

1/4 tsp. cumin

2 jalapeno peppers, seeded and chopped

In large pot, brown ground beef. Drain. Combine remaining ingredients and simmer 25 to 30 minutes. Serves 4.

Super Chili

2 tbls. olive oil

3 cups chopped onion

3 lbs. ground beef

1 28 oz. can whole tomatoes, undrained and chopped

1 cup ketchup

1 4 oz. can green chiles, undrained and chopped

2 jalapeno peppers, seeded and chopped

1 tsp. worcestershire sauce

1 tsp. chili powder

2 tsp. garlic powder

1/2 tsp. pepper

1 tsp. paprika

1 tsp. salt

2 cans pinto beans, undrained,,15 oz. each

In large pot heat oil. Add ground beef and onions. Brown and drain. Add remaining ingredients. Simmer for 30 minutes. Serves 10.
