The gas cook top portion of your stove is the best, most accurate way to cook. It has great boil time speed depending on the power of the burner. You have also got this really nice flexibility in your burners and really good stoves. Good gas stoves go from the most delicate simmer up to the hottest fast fry imaginable on one dial. A lot of people use gas cook tops exactly for that reason, because it allows them more accuracy and more flexibility. Potential drawbacks, though not in every case, relate to the oven. That's because in the past, gas ovens have been perceived to have less even performance. Now again, with that whole advent of convection, gas convection does a lot to make the temperatures more even in the oven cavity. So a lot of the drawbacks of a gas stove have kind of been negated with all this new technology.
