4 c fresh chopped apples
1 c wesson oil
2 c sugar
2 c flour
1/2 tsp soda
1 1/2 tsp baking powder
3/4 tsp salt
2 tsp cinnamon
1 tsp vanilla
2 eggs
Beat eggs, add sugar. Beat; add oil and beat. Sift dry ingredients into the mixture. It will be a very thick mixture after adding apples. Bake at 350 degrees for 40 minutes. Makes 2 layers.
ICING:
1 8-oz pkg cream cheese
1/2 stick butter
1 tsp vanilla
1 1 lb box powdered sugar
Beat cream cheese and butter until smooth. Add vanilla and powdered sugar. Spread on cake; sprinkle with pecan chips.
