1 haddock or lake trout - 3 or 4 pounds
1 tablespoon oregano
1 tablespoon minced parsley
2 tablespoon chopped onion
6 tablespoon olive oil
1 32 oz.can tomatoes
salt and pepper
Cut 3 crosswise gashes in front and back of fish about 2 inches long. Stuff each gash with parsley and onion. Place fish in greased baking pan, using 4 tablespoon olive oil. Sprinkle with salt, pepper, and oregano. Dribble the rest of olive oil over fish. Mash tomatoes with a fork and pour over fish. Bake in 425 degree oven for 10 minutes. Reduce heat to 400 degrees and bake until tender, about 1/2 hour.
