Mustard cream turkey baked potato recipe

This baked potato is topped with juicy turkey chunks smothered in a mustard cream sauce - great as a lunch or quick family dinner.

This healthy, fast and easy to make fancy baked potato recipe makes a great lunch or dinner side dish or main course for all ages. This recipe serves 4.

INGREDIENTS:

4 large baking potatoes, scrubbed and washed

2 tbsp. sunflower oil

4 oz. turkey breast meat, diced

1 tbsp. German mustard

1 cup turkey stock

1 onion, finely chopped

seasoning to taste

margarine or butter for mashing potato

METHOD:

Preheat oven to 400 F (200 C). Bake potatoes for 1 hour until skins are slightly browned and crisp.

Meanwhile, heat sunflower oil in a frying pan. Add turkey meat and brown on all sides, about 5 minutes. Add mustard, stock, onion and seasoning. Fry gently for 15 minutes, covered.

Remove potatoes and cut each one in half. Divide butter or margarine between each half and mash into potatoes. Put halves on serving plates and spoon turkey mixture on top. Serve hot as a great lunch or quick family dinner.
