The exact origin of barbecue sauce is unknown, though many cultures and countries have tried to claim credit for the sweet or spicy sauce that has become a worldwide favorite. Each culture and family has their own way of mixing and blending spices to create their own version of the classic barbecue sauce.
SOUTHWESTERN OLD STYLED BARBECUE SAUCE
1/2c ketchup
1-1/2T liquid smoke
1-1/2T apple vinegar
1-1/2T worchester sauce
1/2t chili powder
1/2t onion powder
Blend all ingredients together. Refrigerate 4 hours. Transfer mixture to saucepan and heat on low for 15 minutes. Sauce can be used as a topping, during cooking or to baste beef.
SPICY BARBECUE SAUCE
2T butter
1 clove garlic
1 onion, diced
1t black pepper
1t salt
1/4c celery, chopped
1/2t dried mustard
1c ketchup
3/4c water
2T Worcestershire sauce
2T brown sugar
2T white vinegar
1/2t Hickory
Mix together garlic, butter, onion, celery, salt, pepper and mustard. Transfer to sauce pan and heat on low to medium flame for 15 minutes. Blend in Worcestershire sauce, vinegar, lemon juice, brown sugar and hickory. Simmer 15 minutes. Add ketchup and water and simmer an additional 30-45 minutes.
ASIAN BARBECUE COATING
1/2c ketchup
1/4c soy sauce
1/2c corn syrup
2 garlic cloves, minced
1/2t cinnamon
1/2t anise seed
1/4t cloves
1/4t black pepper
Mix all ingredients together and store in an airtight container. Refrigerate at least 2 hours, allowing flavors to blend. Brush on to meat during cooking process, basting every ten minutes. Mixture can also be heated and served as a sauce.
PEPPERED BARBECUE
1/2c ketchup
1/2 onion, chopped
2T brown sugar
1t Worcestershire sauce
1T dry mustard
1 garlic clove, minced
1 red pepper, minced or chopped
In a medium sized saucepan, combine all ingredients. On low heat, simmer 15 minutes, stirring often.
RED SAUCE
1c tomato puree
1t sugar
1T dry mustard
1t ginger
1t Worcestershire sauce
1T butter
1t garlic paste
Salt and pepper to taste
In small saucepan, mix all ingredients and heat on low. Mixture will be thick. Refrigerate 4 hours to allow spices to mix and blend. Reheat on low when ready to use.
TIPS AND TRICKS
BARBECUE sauce can be made of any combination of ingredients. The common ingredient in most sauces is ketchup. You can experiment from there, adding your own blend of spices.
ADD 1/4 cup of raisins for a sweet, tangy alternative to your favorite BARBECUE sauce.
ADDING a few drops of hickory or liquid smoke gives a whole new flavor to a tired sauce!
POUR in 2 ounces of whiskey to your sauce while cooking for a tangy treat.
ONE teaspoon of parsley adds color and flavor to sauce.
BARBECUE sauce can be added to almost any type of meat.
SHRED leftover turkey, chicken or beef and mix in BARBECUE sauce. Heat on low and serve on buns.
