Broccoli rice casserole recipe

Recipe for broccoli, rice, onion and mushroom in a delicious casserole.

1-1/4 cups rice

3 cups chicken broth

20 ounces frozen broccoli

1-1/4 sticks butter

1/4 cup minced onion

1/4 cup mushrooms, chopped

1/2 cup flour

1/2 cup dry breadcrumbs

Directions:

Preheat oven to 350 degrees.

Cook rice in 3 cups broth. Fluff and put in greased casserole dish. Boil broccoli and drain. Pour over rice. Melt 1 stick butter in skillet and add onions and mushrooms. Saute until onion is soft. Mix in flour and cook 2 minutes, stirring constantly. Pour over broccoli. Melt remaining butter in saucepan and add breadcrumbs. Cook until lightly brown, stirring constantly. Sprinkle over broccoli. Bake for 30 minutes.
