This healthy, fast and easy to make vegetable and meat pie pastry recipe makes a great side dish, lunch or meal for a family dinner. This recipe serves 4.
INGREDIENTS:
8 oz. thawed shortcrust pastry, rolled out to 1/4 inch thick
2 cups refried beans
2 cups medium salsa
2 cups Havarti cheese, grated
1 cup guacamole
1 cup sour cream
1 cup Cheddar cheese, grated
6 large soft tortillas
METHOD:
oven to 400 F (200 C). Fit pastry into a large pie dish. Set aside.
Divide all ingredients, except milk and pastry into thirds. Begin first layer with refried beans. Spoon on salsa and sprinkle on Havarti cheese. Add a soft tortilla, pushing to the edges.
Spread across the guacamole, then sour cream. Sprinkle with Cheddar cheese and repeat these steps two more times, ending with Cheddar cheese on the top of the pie. Bake for 45 minutes or until golden. Serve hot with a light salad and soft rolls.
