Candied sweet potatoes
Ingredients
675 g/ 1 ½ LB sweet potatoes, sliced
40 g/3 tbsp butter
1 tbsp lime juice
75 g soft dark sugar
1 tbsp brandy
grated rind of 1 lime
lime wedges to serve
Cook the sweet potatoes in a saucepan of boiling water for 5 minutes. Remove with a perforated spoon and drain.
Melt the butter in a large frying pan. Add the lime juice and brown sugar and heat to dissolve the sugar.
Stir the potatoes and brandy into the sugar and lime juice mixture. Cook over a low heat for 10 minutes until the potato slices are cooked through.
Sprinkle the lime rind over the top of the sweet potatoes and mix well.
Transfer to a serving plate. Garnish with the lime wedges and serve.
