For this recipe you will need:
6 skinless chicken breasts, halved
1 can Rotel diced tomatoes (you choose flavor!)
1 16 oz package shredded low fat cheddar cheese
2 avocados, pitted and quartered (optional)
2 tbsp. cooking oil / or non stick cooking spray
1 tsp Cumin, 1 tsp. Garlic Powder, 1 tsp. Cilantro
Coat shallow baking dish with cooking oil.
Wash your chicken thoroughly, and place in shallow baking dish.
Sprinkle all seasonings liberally over chicken, turn over and sprinkle other side.
Bake in oven, at 350 degrees, for 15 minutes.
Remove chicken and pour Rotel tomatoes evenly across the chicken breasts.
Return to oven, bake at 350 for an additional 15 minutes.
Remove chicken from the oven and sprinkle all cheese evenly across chicken breasts.
Return to oven for 7 - 10 minutes, until cheese is melted evenly.
I like to serve with Spanish rice, and sliced avocado. Enjoy - this is really simple and believe me your family will love this!
