Spicy Chicken & Rice
2 tbsp of olive oil
1 garlic clove cut in half
4 chicken breasts, skinned and de-boned
1 large onion chopped
1 tomato chopped
1 green pepper chopped
1 red pepper chopped (optional)
1/4 cup of salsa
1/2 package of taco seasoning
1/4 cup of water
1 cup of rice
4 tbsp of salsa
2 tbsp of taco seasoning
dash of pepper and salt
Heat oven to 350 deg. Mix rice ingredients in a pot with a bit of the chopped onion, green pepper, and tomato and bring to a boil. Simmer until rice is cooked.
In a frying pan, heat oil and garlic. Once oil is hot, fry chicken until both sides are cooked (middle will cook in the oven). Add the remaining ingredients to the chicken in the frying pan and bring to a boil. Simmer for five minutes.
Place rice in a casserole dish and spread evenly along the bottom. Place chicken on top and season with salt and pepper. Put into the oven and cook for 30 minutes or until chicken is cooked completely. Garnish with parsley.
