“Tex-Mex” food seems to be a favorite today among Americans, and everyone seems to have their favorite Chili recipe. I found an easy seasoning mix that stores well that makes cooking Chili a breeze! It also can be used in a variety of other “Tex-Mex” creations.
Chili Seasoning Mix
2 tablespoons chili powder
1 teaspoon salt
1 tablespoon seasoned salt
1 teaspoon onion powder
2 teaspoons cumin
1/2 teaspoon garlic powder
1 teaspoon oregano
Mix all ingredients; store in a small airtight jar in a cool, dry place. Makes about 1/4 cup.
Quick Chili With Beans
1 lb. ground beef
1 can stewed tomatoes
1 tablespoon Chili Seasoning Mix
1 can kidney beans
2 tablespoons cornmeal or flour
1/2 cup shredded cheddar cheese (optional)
Brown ground beef in a large saucepan, stirring occasionally, until meat loses its red color. Stir in cornmeal/flour, then add remaining ingredients. Bring to a boil, cover and simmer 10 minutes, stirring occasionally. Serve in bowls, sprinkle with shredded cheese. Serves 4.
Chili Macaroni
1 lb. ground beef
1 cup cooked macaroni
1 can stewed tomatoes
1 tablespoon Chili Seasoning Mix
Cook beef in a large saucepan, stirring occasionally, until meat loses its red color. Add remaining ingredients and simmer 5 minutes, stirring occasionally. Serves 4
Chili Snack
4 cups cornflakes
1 cup small pretzels
2 tablespoons butter or margarine, melted
1 cup unsalted nuts
2 teaspoons Chili Seasoning Mix
Heat cornflakes in a 300degree oven for 5 minutes, or until warm. Remove from heat and add pretzels and nuts. Mix lightly. Pour butter over mixture and sprinkle with chili seasoning mix. Stir well and put back in oven 15 - 20 minutes. Serve warm or cool. Makes 6 cups.
