If you still haven’t tried tofu in your recipes you’re missing on a very healthy, nutritious and great tasting alternative to meat. Try these recipes and you’ll be hooked on tofu.
Hearty Tofu Stew
1 Ear of corn cut into six pieces or 1/2 - cup of canned corn
1 - Pound of firm tofu cut into one-inch cubes
1/2 - Pound of broccoli cut into small pieces, use both flowers and stems
1 Potato peeled and cut into one inch cubes
1 Sweet potato peeled and cut into one inch cubes
1/2 - Large onion diced
2 - Tomatoes diced
1/4 - Cup worstershire sauce
1/2 - Teaspoon ground cumin
1/4 - Teaspoon Mrs. Dash all purpose seasoning or your favorite all purpose seasoning
1/2 - Teaspoon garlic powder or two minced garlic cloves
3 - Cups water
Put all the ingredients in a large pot. Cook on medium heat for approximately one hour, adding extra water when needed to avoid drying out. Bring heat down to low and simmer for approximately one hour. To prevent complete evaporation add water as needed. Turn off when liquid has decreased to approximately one cup. This is a great tasting, healthy stew, which is great for storing. You can keep refrigerated for up to 4-5 days, and actually tastes better the second and third day.
White Rice Topped With Tofu
1 - Cup of rice, cook according to directions on package
1/2 - Pound firm tofu cut into 1/2-inch cubes
1 - Large green pepper cut into strips
1 - Large red pepper cut into strips
2 - Large onion cut into rings and separated
2 - cups water
1/4 - cup worstershire sauce
1/2 - Teaspoon ground cumin
1/2 - Teaspoon garlic powder
1/2 - Teaspoon Italian seasoning
Place all ingredients in large skillet except for tofu, sauce and one cup of water. Cook at medium to high heat for approximately thirty minutes or until peppers are tender. Bring heat down to low, add tofu and sauce. Simmer for approximately 45 minutes adding the last cup of water as needed to prevent drying out. Remove from heat when almost all the liquid has evaporated. Serve rice topped with tofu mixture. This is a great alternative to pepper steak and much healthier.
