Most of this quick and easy breakfast menu can be prepared the night before and is great for overnight or early morning guests. It is one way to get a good meal without spending too much time in the kitchen and without creating too much of a mess.
Breakfast Bake
1 dozen eggs
1 10-12 ounce bag shredded cheese (any variety)
1 pound of cubed ham
¼ cup diced onions
¼ cup of diced green pepper
¼ mushrooms,
1 cup of milk
Salt, pepper, paprika to taste
8 slices of bread (wheat or white usually do best)
Spray an oblong casserole dish (9āx13ā) with cooking spray. Cut the crust off the bread slices and then cut the bread slices into four squares each and line casserole dish with them. Beat eggs, milk, salt, pepper, and paprika in a bowl. Stir in onions, green pepper, and mushrooms. Pour mixture over bread and sprinkle cheese on top. Let sit in refrigerator overnight while covered in foil. Bake at 350 degrees for 45 minutes. Serves 6-8 people.
Easy Cinnamon Apples
2-3 pounds of sliced and peeled apples
1 9-ounce bag of red hots or similar cinnamon candies
Place apples in crock pot and cover with red hots. Cook on low temperature for 4-6 hours. Stir and spoon the cinnamon sauce over the apples occasionally. For softer apples cook longer. Serves 4-6 people. These apples can be served hot or cold and can be kept in the refrigerator for a few days after preparation.
Orange Smoothies
2 ½ cups Orange Juice
2 cups Milk
1 ½ cups Vanilla Ice Cream
1 banana
1 small cup of fruit yogurt
Mix all ingredients in blender until mixture is smooth. Pour into chilled glasses and serve at once. Serves 4-6 people.
