2 frying chickens
2 cup flour
salt and pepper
1/4 cup grated parmesan cheese
4 eggs, beaten
2 cups canola oil
Cut chicken into serving pieces. Combine flour, cheese, salt and pepper. Dip chicken in beaten eggs and roll chicken in the mixture. Fry in hot oil over high flame until brown. Turn once. Cover pan and reduce heat to low and cook chicken until tender, about 30 minutes. Serves 4.
