Gazpacho recipe

This gazpacho recipe is a great summer starter or light dish perfect for alfresco dining.

Gazpacho

This is a traditional chilled Spanish soup ideal for a summer lunch or starter. For excellent flavoured soup ensure that all the ingredients are in the best possible condition.

Ingrediants:

1 green pepper, seeded and chopped

1 red pepper, seeded and chopped

½ cucumber

1 fresh red chilli, seeded and chopped

450 g/ 1 Lb. ripe tomatoes

900 ml/1 ½ pints passata or tomato juice

30 ml tbsp red wine vinegar

2 tbsp olive oil

1 tbsp caster sugar

salt and pepper

 Reserve a small piece of red and green pepper, cucumber and onion. Finely chop and set aside for the garnish.

 Process all the remaining ingrediants into a blender until smooth.

 Pass the soup through a sieve into a clean glass bowl, pushing it through with a spoon to extract as much flavour as possible.

 Adjust the seasoning and chill. Serve sprinkled with the reserved chopped peppers, cucumber and onion. For an extra touch add crushed ice to the garnish.
