4 c flour
1 c buttermilk
1 1/2 c butter or shortening
1 tsp nutmeg
1 tsp cloves
1 tsp cinnamon
1 tsp soda
1 tsp baking powder
2 c strawberry jam
1 c cherry preserves
6 eggs
1 c crushed pineapple
1 c nuts
2 c sugar
Cream sugar and shortening; add egg yolks. Beat egg whites and fold in last. Sift dry ingredients and add alternately with buttermilk. Add jam, preserves, pineapple and nuts; fold in beaten egg whites. Bake in oven at 325 degrees until done for loaf or tube pan and at 350 degrees for layer cake. Makes a very large cake.
ICING:
4 c brown sugar
1 c cream
1 c butter
1 can crushed pineapple
Combine all ingredients, cook to soft ball stage. Beat until creamy. Spread on cake.
