1 pkg pineapple gelatin
1/2 c diced celery
1 c hot water
1/2 c chopped walnuts
1/2 tsp salt
1/2 c crushed pineapple, drained
1 c cold liquid (pineapple juice plus water to make 1 c)
1 c chopped raw cranberries
Dissolve gelatin in hot water. Add salt, cold liquid. Chill until slightly thickened. Fold in remaining ingredients. Turn into 1 quart mold and chill until firm. Unmold on a bed of crisp lettuce. Decorate with additional walnut pieces. Serve.
