This healthy, fast, and easy to make bean with cheese dish is a great side dish or warm snack for a family dinner or afternoon. This vegetarian recipe serves 4.
INGREDIENTS:
4 cups leeks, washed and sliced into 1 inch chunks
3 tbsp. butter, melted
½ cup all-purpose flour, sifted
1 tsp. salt
1 tsp. black pepper
2 cups milk
2 cups Camembert cheese, chopped
METHOD:
Steam leeks for 10 minutes.
Meanwhile, mix flour into melted butter until a thick paste is formed. Slowly add milk, forming a thick and then thin paste. Finally mix in rest of milk until a smooth runny sauce is formed.
Add salt and black pepper. Heat on medium, stirring constantly for 5 minutes until sauce has thickened. Remove from heat and stir in Camembert cheese until melted.
Arrange leeks on a serving dish and pour over the cheese sauce. Serve hot as a great accompaniment to a barbecued meal or steak dinner.
