1/2 lg green pepper
1 lg onion
2 hot pepper pods
1 c grated cheddar cheese
3 eggs
1/2 c vegetable oil
1/2 c flour
1 c yellow cornmeal
1 tsp salt
1/2 tsp baking soda
3 tsp baking powder
1 c buttermilk
1 clove chopped garlic
1 can mexican-style corn
Chop green pepper, onion and hot peppers; set aside. Grate cheese. Beat eggs and oil in mixing bowl. Add dry ingredients, then milk. Then fold in chopped garlic, well-drained corn, cheese and chopped vegetables. Pour in well-greased 13x9 inch pan. Bake at 450 degrees for 25-30 minutes.
