Cooking parsley for a long length of time takes away from its flavor and vitamin source. When adding to foods just add towards the end of cooking. Fresh parsley is the best, dried parsley is not as healthy. You can freeze parsley to avoid spoilage, just wash, chop and freeze.
This is a good and tasty way to enjoy parsley in a snack. It can be used with crackers, celery, carrots, or even potato chips.
Parsley Spread
You will need:
1/4 cup sugar
1 egg
1 8 oz package of cream cheese
1/4-cup parsley chopped
Blend together with mixer in medium bowl: sugar, cream cheese, and egg. When mixture is fluffy add parsley and blend until well blended. Store in refrigerator to chill.
This is a great spread for any occasion.
