Pear & pickerel kebab recipe

These tasty pear and pickerel fish kebabs, marinated in lemon sauce and herbs for a great evening meal with rice and a salad.

This healthy, fast and easy to make vegetable and meat skewer kebab grill recipe makes a picnic or barbecue lunch, party favorite or dinner. This recipe serves 4.

INGREDIENTS:

8 oz. pickerel, washed and cut into 1 inch chunks

8 oz. Bosc pears, cored and cut into thick wedges

1 onion, coarsely chopped

½ cup sunflower oil

1 cup port

1 tsp. tarragon, chopped

1 tsp. parsley, chopped

1 tsp. turmeric

1 cup sour cream

½ cup lemon juice

a spinach salad to serve

soft crusty rolls to serve

METHOD:

Combine onion, oil, tarragon, parsley, turmeric, sour cream and lemon juice. Add pickerel and pear pieces and coat thoroughly. Cover and chill for 5 hours.

Preheat grill to hot. Using metal skewers, pierce centers of each piece until full. Balance skewers on a grill pan and cook for 5 minutes each side, or until juices run clean. Serve hot with a spinach salad and soft crusty rolls.
