INGREDIENTS
10 potatoes, cleaned and peeled
2 Onions, chopped
1 Tablespoon oil
1 packet oxtail powder soup mix (or use brown gravy powder, about 1/4 cup)
1 cup of butter or margarine
Parboil the potatoes in salted water.
Brown the onions in the oil and remove from heat.
Line the bottom of an ovenproof dish with the onions.
Cut the potatoes into one-inch slices and arrange a layer of potatoes on top of the onions.
Sprinkle a bit of the soup mix over the top of the potatoes. Dot some of the butter on top.
Repeat with another layer of potatoes, then soup mix, and then butter - until finished.
Bake in a pre-heated moderate oven for about 30 - 40 minutes.
