It is not unusual in today's busy times to find oneself in the kitchen with just a few minutes to assemble dinner. But "quick" doesn't have to mean "boring." Here are some recipes for main dishes that are tasty and easy. Best of all, they can be prepared in less than 30 minutes per meal. Bon appetit.
HAMBURGER STROGANOFF
You will need:
1 pound ground beef
1 medium onion (or equivalent in dry onion flakes)
1/4 cup margarine
1/4 cup water
2 tablespoons flour
1 teaspoon salt
1 teaspoon garlic or garlic salt
1/4 teaspoon pepper
1 can mushroom stems and pieces, drained
1 can cream of mushroom soup
1 cup sour cream
2 cups hot cooked noodles
In a large skillet, brown ground beef and onion in margarine. Drain off grease. Turn heat to low and add 1/4 cup water. Stir in flour, spices, and mushrooms. Cook 5 minutes, stirring constantly. Add soup. Simmer uncovered 10 minutes. Stir in sour cream last 2 minutes. Serve over noodles.
SPICY BEANS AND RICE
You will need:
1/2 pound ground beef
1/2 pound spicy ground sausage
1 can spicy tomato paste
1/3 cup bell pepper
1 beef bouillon cube
1 can kidney beans with liquid
1/2 cup grated cheddar cheese
2 tablespoons dry onions
2 teaspoons chili power
1/4 cup rice
1/4 cup water
1 tomato, chopped
salt and pepper
3 drops hot sauce (optional)
Crumble and brown meat in large skillet. Drain off excess grease. Add all ingredients except salt, pepper, and cheese. Stir. Salt and pepper to taste. Cover and simmer on low heat 20 minute or until rice is soft. Sprinkle grated cheese over top and simmer uncovered 5 more minutes to melt cheese. Can be served with cornbread.
BROILED SEAFOOD DELIGHT
You will need:
2 boiled eggs (boil the day before and refrigerate over night)
2 3-ounce packages cream cheese
2 teaspoons lemon juice
1/4 teaspoon salt
1 can crab meat, flaked
1/3 cup finely chopped celery
English muffins, split
Butter or margarine
1 large tomato, sliced
olive slices
Preheat oven to broil. Combine softened cream cheese, lemon juice, and salt. Chop eggs and celery and blend into cream cheese mixture. Add crab meat. Split and butter English muffins. Place muffin halves on a baking sheet and toast under oven broiler. Remove from oven. Top each half with a slice of tomato and crab meat mixture. Broil until mixture is golden brown at peaks. Garnish with olives and serve while warm.
CHICKEN-KABOBS
You will need:
pre-cooked chicken pieces (not breaded)
1/2 package bacon - uncooked
1 bell pepper
2 small yellow squash
1 tomato
1/4 cup lemon juice
1/4 cup margarine, melted
nonstick cooking spray
broiling skewers
Preheat broiler. Cut pepper, squash, and tomato into large bite-size pieces. (Vegetables will shrink some when broiled.) Lightly coat peppers with nonstick spray. Wrap individual chicken pieces with bacon cut to strips of about 3 inches. Arrange meat, pepper, squash, and tomato on skewers, alternating between vegetables and meat.
Combine lemon juice and melted margarine. Use a brush to apply to kabobs. Broil just long enough to soften peppers. Turn once and brush again with lemon/margarine mixture. Total broiling time, about 14 minutes.
GRILLED CHICKEN SALAD
You will need:
1 package pre-grilled chicken
lettuce
1 package croutons
grated parmesan cheese
caesar salad dressing
Prepare lettuce for salad. Toss with parmesan cheese. Warm pre-grilled chicken in microwave. Serve plates individually, arranging lettuce on each dish first, topped with the warm chicken and croutons. Complement with caesar dressing on the side.
SKILLET HASH
You will need:
1 pound ground beef
1 onion (or the equivalent of dried onion flakes)
1/4 cup margarine
1 package frozen hashbrowns
3/4 cup water
1 tablespoon Worcestershire sauce
1/4 teaspoon rosemary
1/2 teaspoon garlic or garlic salt
salt and pepper
In large skillet, brown meat and onions in margarine. Drain excess grease. Pour meat and onion from skillet to bowl lined with five or six paper towels to soak any grease left. Prepare hashbrowns according to package directions. Stir in meat and onions. Add water, Worcestershire sauce, and spices. Salt and pepper to taste. Cook over low heat 5 minutes until warmed throughout, stirring often to prevent sticking. Serve with salad or sliced tomatoes.
