INGREDIENTS
4 cups unsifted flour
2 teaspoons salt
2 teaspoons sugar
3 ½ cups water
Use a large and deep enamel pail with a tight-fitting lid.
Boil the water and pour the boiling water into the pail.
Add the salt and sugar, stirring slightly.
Sprinkle the flour onto the liquid.
Put the lid on the pail, cover the pail in a blanket and leave it overnight in a warm place.
The next morning stir in 1 cup of boiling water and cover again, keeping the pail in a warm place for one hour.
The mixture should appear frothy and will have a strong, unpleasant odour.
Use the yeast immediately - it is enough for 4 small loaves of bread.
