This healthy, fast and easy to make baked scone cake recipe makes a great breakfast, lunch or dinner side dish, desert, or main course for all ages. This recipe serves 4 and is a thirty minute meal.
INGREDIENTS:
1 large and thick round unsweetened scone
1 cup Cheddar cheese, grated
1/4 cup spicy salami, diced
1/4 cup green peppers, deseeded and diced
1 cup thick cream
1 tsp. black pepper
1 cup Asiago cheese, grated
1 cup Dolcelatte cheese, grated
METHOD:
Preheat oven to 400 F (200 C). Cut scone into four layers. Put the Cheddar cheese between the top two layers. Repeat for the bottom two layers. Keep top and bottom separate.
Using alternating layers, add salami, peppers and Asiago cheese. Using a bowl, combine the cream, black pepper and Dolcelatte cheese. Mix well and add on top of the salami/vegetable layers.
Press scone lid on top of the filling - firmly, but gently. Wrap in foil and bake for 20 minutes until hot. Serve hot or cold with a light salad and soft rolls for a quick dinner.
