This healthy, fast and easy to make vegetable and meat skewer kebab grill recipe makes a picnic or barbecue lunch, party favorite or dinner. This recipe serves 4.
INGREDIENTS:
5 oz. large squid tubed, washed and cut into 2 inch squares
5 oz. sweet green and yellow peppers, deseeded and cut into 1 inch squares
5 oz. shallots, peeled
1 onion, coarsely chopped
½ cup sunflower oil
1 cup cilantro, chopped
1 cup coconut milk
2 tbsp. curry powder
½ cup lime juice
a spinach salad to serve
soft crusty rolls to serve
METHOD:
Combine onion, oil, cilantro, coconut milk, curry powder and lime juice. Add squid and vegetable pieces and coat thoroughly. Cover and chill for 5 hours.
Preheat grill to hot. Using metal skewers, pierce centers of each piece until full. Balance skewers on a grill pan and cook for 5 minutes each side, or until juices run clean. Serve hot with a spinach salad and soft crusty rolls.
