Fast and easy family recipes: Tomato bredie recipe

Tomato Bredie is a traditional South African recipe for mutton stew.

INGREDIENTS

2 kilograms mutton ribs, chopped (about 4 and a half pounds)

6 large tomatoes, chopped

6 potatoes, chopped

2 onions, chopped

1 teaspoon black pepper

1 Tablespoon butter

1 Tablespoon flour

salt to taste

1 Tablespoon sugar

Brown the onions in the butter. Add the meat and brown lightly. Add about 2 cups of water. Bring to the boil.

Reduce heat, cover the pot and let it simmer for 2 hours. Check at intervals to ensure that there is enough water to keep the meat from burning. Add little bits of water if needed.

Add the tomatoes, potatoes, pepper, salt and sugar. Mix well and continue to simmer for another hour.

Mix the flour with about 3 tablespoons of water to form a thin paste and add to the stew to thicken.

Remove from heat and serve with rice.

Tomato Bredie is even tastier if it is left (in a fridge) for a day and then reheated.
