A great meal to warm your heart and toes on cold wintry days.
Ingredients:
2 tablespoons margarine
1 large onion, finely chopped
1 large sweet potato, peeled and chopped
3 large carronts, peeled and chopped
4 1/4 cups canned chicken or vegetable broth
3/4 cup sour cream
2 tablespoons dill, chopped
Directions:
Melt the butter and cook the vegetables about 5 minutes. Add the broth and bring to a boil. Reduce the heat and simmer for 30 minutes or until the vegetables are tender. Puree in a blender or food processor with the sour cream. Add the dill and reheat slowly without boiling. Serve immediately in heated bowls. Serves 8.
