The good ones are going to cost you at least $200 to $300. A lot of people go into stores and you will see that they sell them individually and that kind of makes sense. You can get a knife block and put in the knives that you want and use the most. What our customers find is that they will take the one knife out of their knife block and replace it with a ceramic knife because they use it so often. They are always reaching for it. So along with any good set you are going to have at least have one or two ceramic knives as well. We don't sell ceramic knives in sets. For specialty applications you will usually use your steel knife.
The ceramic knives come individually because you may also find you are really cutting a lot of tomatoes for example. If you are doing a lot of slicing, you are going to want that utility knife. So maybe you will have a chef knife and a utility knife or paring knife, so those will be your ceramic knives. The other one will be the steel knife that you use for cutting meat- a boning knife or a fish knife for example. It ranges in price. A knife price starts at $29.95 and they go all the way up to $800 for a sushi meat knife.
You always want to look for knives that are light weight and easy to handle. Our knives are typically half the weight of traditional cutlery. You are doing repetitive cutting tasks in the kitchen so you must see that they are very, very nice and comfortable in your hand. You don't want to use extra effort to push it through the food and they should be perfectly balanced in your hand. Even when you are shopping for metal or steel knives, you want to have that comfort and that grip and make sure that it really fits well in your hands. We recommend that you go to the store and try several out. Go to the knife wall and have them pulled out so you can really feel them in your hand. There is quite a difference in how the handle feels in individual hands. If you have smaller hands, a six inch chef knife might be better for you than an 8 or 10 inch chef knife. Women particularly need to consider that when they are looking at some of the heavier steel knives.
