We recommend that you put them in a drawer or in a knife block. Leaving them out is not a good idea, especially in a dish drain or something, because you are more likely to pile things in and damage it. That could happen with high carbon steel; you can get the tip bent. People use them for prying sometimes, and that will wear off the tip. If you take care of your knife like all professional cutlery should be taken care of, you should have a nice result. We also recommend that all professional cutlery not be put in the dish washer.


High heat and humidity are going to cause expansion and contraction on the handle. It will wear the wood down on the wood-handled knives. Another thing too, things can fall from the top of the dishwasher on to the blade and there is vibration in there. When you're moving things around, they are knocking against each other, so you really want to always wash them and put them back. Put them away and then you will have a really great set that will last for a long time.
