If (for any reason) you ever have a knife get away from you and its starting to fall, the thing that you absolutely need to learn instinctively is to just let it fall. Don't try to grab or hold on to or catch the falling knife because then you can end up in the emergency room.
You want to make sure that you are not trying to grab the knife if it's falling or anything like that. When you are passing it to someone else, lay it down on the work surface, and put the handle extended towards the person. If you are carrying or working with the knife, always hold it by the handle. You are not going to have as much slippage while cutting if the knife is kept really nice and sharp. You need to be honing your skill knives and getting them regularly sharpened. You never really want to immerse them in soapy water because you could get cut on the blades. You always want to be pretty quick to wash those first and get them out of the way. You don't want to soak any wood handled knives because that's going wear down the knife more quickly. You don't want to use them for other cutting tasks- don't try opening bottles and don't scrape the cutting board.
