This tasty vegetable recipe features mashed butternut squash and Brie cheese - great as an accompaniment to roasted or barbecued poultry.
This healthy, fast and easy to make vegetable purree is a great side dish or appetizer bake for a family dinner or dinner party. Use your food processor to introduce healthy vegetables to your kid's meals. This vegetarian recipe serves 4.
INGREDIENTS:
3 cups butternut squash, peeled, deseeded and diced
2 oz. butter
1 cup Brie cheese slices
1 large clove garlic, finely crushed
1 tsp. salt
1 tsp. black pepper
parsley sprigs to garnish
METHOD:
Melt butter in a pan. Add squash and cook for 10 minutes. Add garlic, salt and black pepper. Fry for 3 minutes until aromas become strong.
Using a food processor, puree squash mixture and Brie cheese slices. Reheat in pan and serve hot, garnished with parsley sprigs, as an accompaniment to roasted or barbecued poultry.
