Approach the pool as something that is going to have some nice scenery. Your plant selection should incorporate a path that doesn't drain because think the draining will track across the pool bed and possibly get into the pool. That would create a maintenance nightmare. I would use more stone to create the best path to and from and use a cypress that will stay at a place close to the pool. I would install one or two trees depending on how they are situated. You do not take up the person's sun if they want to sunbathe and 1-2 trees would give enough shade to keep some sun blocked in certain areas. If you are going to have a barbeque area, you have to set it independently by itself but still close enough to the pool area so it is not too far away. Then add some low level or path lights to surround the pool, depending on how the pool is landscaped. If you want lights in the pool, you can also have them around it which is going add to the tranquility of the experience.
