A delicious and easy to make finger food appetizer, combining acorn squash and asiago cheese in a small puff pastry. The luxurious taste of this free recipe is great as a party food or served before a fancy dinner. This dish serves 4.
INGREDIENTS:
1 cup cooked acorn squash, peeled, deseeded and chopped
4 oz. Asiago cheese
1 tsp. salt
1 tsp. black pepper
7 oz. puff pastry, thawed and rolled into thin 8 squares
1 egg yolk, beaten
METHOD:
Preheat oven to 400 F (200 C). Using a food processor blend acorn squash, Asiago cheese, salt and black pepper until smooth.
Spoon one-eighth of acorn mixture onto each pastry square. Moisten edges of pastry with water. Fold each pastry to form triangles. Crimp edges to seal.
Brush each triangle with egg yolk and bake on a silicon lined cookie sheet for 20 minutes until golden and puffed. Serve hot with cold cuts and a light salad.
