Chicken Stir Fry Recipe

Try this tempting chicken stir fry recipe to spice up your meals!

1 pkg frozen peas, defrosted completely

1/2 lb chicken breasts, deboned and cut into chunks

1/2 tsp sugar

1 tbsp sherry

1/2 tsp sugar

1 tsp cornstarch

3 slices ginger root or 1/2 tsp ginger

1/2 tsp salt

4 oz almonds

3 tbsp soy sauce

1/2 tsp MSG

3 tbsp oil

1 scallion, incluing the green top, cut into 2-inch lengths

In a bowl, combine soy sauce, sugar, wine and conrstarch and mix until cornstarch is dissolved. Add chicken and toss until all pieces are well coated. Do not marinate chicken in sauce for any length of time.

Heat 1 tbsp oil and swirl around. Add peas, stir fry for 2 minutes. Stir well and remove to a plate. Pour 2 more tbsp oil into pan, raise heat and add ginger and scallion. Stir fry 1 minute. Drop in chicken and cook 2-3 minutes till the flesh turns white. Return peas to pan, add salt and almonds, and cook, tossing only long enough to heat through. Transfer to heated platter and serve immediately. As a main course, with rice, this serves 2.
