Country Pot Roast Recipe

What is better than the smell of Pot Roast slow-cooking in your oven? Try this recipe for Country Pot Roast.

3 lb. chuck roast

3 Tbsp. shortening

2 onions, finely chopped

2 cloves garlic, minced

1/2 cup ketchup

1 tsp. salt

1/8 tsp. pepper

1 cup water

5 carrots, cut into 1/2 inch slices

4 small potatoes, peeled and quartered

salt and pepper

Brown meat well on all sides in heavy skillet or Dutch oven in shortening. Add onions, garlic, and the 1 cup water, catsup, salt, pepper. Simmer uncovered for 30 minutes. Cover and Simmer for 2-1/2 hours in 250 degree oven. Add carrots and potatoes and cook for 2 hours more.
