Delicious apple cobbler and crisp recipe that is easy to make and sure to be a hit with family and friends.

Apple-Berry Crisp

Ingredients For Topping

1 cup quick or old-fashioned oatmeal, uncooked

1/2 cup firmly packed brown sugar

1/3 cup margarine or butter, melted

2 Tablespoons all-purpose flour

Ingredients For Filling

4 cups thinly sliced and peeled apples, about 4 medium

2 cups fresh or frozen blueberries or sliced strawberries

1/4 cup firmly packed brown sugar

1/4 cup frozen orange juice concentrate, thawed

2 Tablespoons all-purpose flour

1 teaspoon ground cinnamon

Directions:

Heat oven to 350 degrees.

Combine topping ingredients and set aside. Combine filling ingredients and stir until fruit is evenly coated. Spoon filling into an 8-inch square glass baking dish. Sprinkle topping evenly over fruit. Bake at 350 degrees for 30 to- 35 minutes or until apples are tender. Serve warm with yogurt, if desired.

Apple Blackberry Crisp

Ingredients - Filling:

6 Granny Smith Apples

2 cups blackberries (I've used both blueberries and raspberries successfully in this recipe.)

1/2 cup sugar

2 Tablespoons flour

Topping:

1/2 cup rolled oats

1/2 cup flour

1/2 cup chopped nuts

1/3 cup melted butter

1 teaspoon cinnamon

Directions:

Spray a 9 x 13-inch baking dish with oil. Place peeled and sliced apples in dish and top with berries. Sprinkle with sugar and 2 Tablespoons flour. Combine topping ingredients until crumbly and sprinkle over filling. Bake at 350 degrees for 30 to 40 minutes.

*************************************************CCRANBERRY-APPLE COBBLER

Ingredients:

1/3 c Butter

2 1/2 c Bisquick

1 c Sugar

1 1/2 c Milk

1 c Whole berry cranberry sauce

1 c chunky applesauce

1 Apple -- cored & thinly sliced

Directions:

Heat oven to 350F. Heat butter in 9 x 13 pan in ovenuntil melted.

Mix Bisquick, sugar, and milk with wire whisk until smooth. Pour batter evenly into pan. Mix cranberry sauce and applesauce. Spoon evenly over batter.

Place apple slices on sauce. Bake 50 to 60 minutes or until golden brown. Serve

warm with whipped cream or rum raisin or vanilla ice cream, if desired.

-------------------------------------------------- Lemon-Rosemary Apple Cobbler

Ingredients:

FILLING:

1/2 Ts Dried rosemary leaves

1/3 c Granulated sugar

2 TB Fresh lemon juice

Rind of 1/2 lemon -- grated

1 1/2 LB Apples, peeled (5 cups) --

Cored and sliced

TOPPING:

1 c All-purpose flour

1 TB Granulated sugar

1 Ts Baking powder

1/8 Ts Salt

1/2 Ts Dried rosemary -- crushed Fine

3 TB Unsalted butter, cold -- cut up

1/3 c Light cream -- or milk

Directions:

Filling Heat oven to 450^. Have ready a heavy dish, a 9-inch pie plate or a single layer cake pan. Crush the rosemary as fine as possible. Place in a large bowl. Add sugar, lemon juice, and rind. Stir to mix. Add apples, stirring to coat. Arrange in baking dish.



Topping:

Mix dry ingredients into medium sized bowl. Add butter and cut in with pastry blender or knives until mixture is the consistency

Of coarse cornmeal. Add cream or milk and stir until a soft dough forms. Knead on lightly floured surface 10-12 times. Roll to fit.

Baking dish, place over apples, seal edges, and cut slits. Bake 25-30 minutes until golden. Serve warm with ice-cream.

Cheddar Apple Cobbler

Ingredients:

1 c Sugar 1/4 Ts Cinnamon; Ground

1/4 c Unbleached Flour

6 c Apple Slices *

TOPPING

1 c Unbleached Flour

6 oz Cheddar; Mild

1 1/2 C Shredded

1/4 c Sugar

1/3 c Butter; Melted

1 1/2 Ts Baking Powder

1/4 c Milk

1/2 Ts Salt

Directions:

* Use cooking apples such as Granny Smith's that have been cored.*

Ingredients, of the topping, with the cheddar cheese, mixing well. Add the butter and milk, mixing until well blended with the flour mixture.

Spoon the dough over the fruit mixture and bake at 400 degrees F. for 30 Minutes.

Apple Cobbler (using biscuit mix)

Ingredients:

1 TB Cornstarch

1 TB Sugar

1/8 Ts Ground cinnamon

3/4 c Water

2 medium Apples, tart, pared, sliced

3/4 c Biscuit mix (see recipe)

2 TB Process American cheese - Shredded

3 TB Water

Directions:

1. Pre-heat oven TO 400 degree F. (hot)

2. Mix cornstarch, sugar, and cinnamon in saucepan. Add 3/4 cup water and mix well. Add apples.

3. Cook over low heat, stirring occasionally, until liquid thickens and apples just begin to soften--about 6 minutes.

4. Pour into 1-quart casserole.

5. Stir biscuit mix and cheese together. Add 3 tablespoons Water and mix well. Spread on top of apple mixture.

6. Bake until top is lightly browned--about 30 minutes.

Ruby Apple Cobbler

Ingredients:

Single 8-inch pie-crust

20 oz Unsweetened pie-sliced apples

-(Not pie filling); canned

4 Purple plums; thinly sliced

-Unpeeled, pitted

1 c Crushed pineapple

-Juice-packed; untrained

6 TB Golden raisins

1/4 c Rum

-Alcohol calories evaporate

3 TB Cornstarch

1 1/2 Ts Cinnamon or apple-pie spice

- plain Salt

4 TB Fructose

-Or equivalent sugar substitute

Directions:

Defrost pierces, if frozen, and set aside. Combine remaining ingredients, Except fructose or substitute, and mix until blended. Spoon half of the Apple-fruit mixtures into a 9-inch nonstick cake or pie pan. Sprinkle evenly with fructose or substitute. Spoon on the remaining fruit mixture. Arrange the pierces on top of the fruit mixture (stretching gently, if necessary, to fit). Make six or seven slits with the tip of a pointed knife. Bake in a preheated 425 oven until crust is golden, about 30 minutes. Serve warm or cold.
