Café Mocha (or Minty Mocha variation)

Note - This is not the espresso based Mocha you usually order at the coffeehouse. Once you have tried this Mocha you may decide to adjust ingredient amounts to better suit your particular taste.

2/3 cup of brewed coffee

1/3 cup of milk

2 tablespoons of chocolate syrup

Sweetened chocolate powder for sprinkling on top (optional)

Pour the fresh brewed coffee into a cup and stir in the chocolate syrup. Steam your milk until frothy and add it to your coffee. There should be a thin layer of foam on the top. If you'd like, sprinkle on some sweetened chocolate powder to top it off.

For a Minty Mocha, stir in 1/8 teaspoon of mint extract along with the chocolate syrup. Adding a sprig of mint on top is a nice touch, but not necessary.

Mexican Mocha

1 1/3 cups of whole milk

2 sticks of cinnamon, broken into three pieces

15 cloves - whole

¾ teaspoons of aniseed

3 ½ ounces of semisweet chocolate - shaved

1 ½ tablespoons of brown sugar - packed

2 cups of brewed coffee

Put the milk, cinnamon sticks, cloves and aniseed in a large saucepan. Bring to a simmer over medium heat, stirring the mixture occasionally. Add the chocolate and brown sugar and stir until it has completely melted the chocolate and dissolved the sugar.

Remove the saucepan from the heat and set aside for 30 to 40 minutes. This will allow the flavors time to steep and blend nicely.

Return the saucepan to medium heat, and whisk in fresh brewed coffee. Bring the mixture to a simmer. Divide the coffee equally into cups using a tea strainer as you pour. Serve immediately.
