Easter Cake Decorating Ideas

Directions to make bunny, basket and egg cakes for Easter.

Decorated cakes make a holiday especially festive. Consider adorning the Easter table with a bunny, egg or Easter basket cake this year, following these simple instructions.

Easter Egg Cake

What you need:

- Rectangular or egg shaped cake

- 2-3 cups of buttercream icing

- 2-3 colors of decorating icing

- Small jelly beans

- Shredded coconut

- Green food coloring

To make an Easter egg-shaped cake, start with a 13x9 cake of any flavor. You can bake a homemade cake or purchase an unfrosted half-sheet cake from a bakery. Dense cakes such as pound cake or cakes with pudding in them are the easiest to cut into shape and decorate.

Using a large piece of paper or parchment paper, cut a large egg-shaped pattern, approximately 13 inches in length and up to 9 inches at its widest spot. Once the cake is completely cool, lay the pattern on top of the cake and use a serrated knife to cut around the cake, following the shape of the pattern. The excess cake may be eaten or discarded. You are ready to decorate the cake.

Note: egg-shaped cake pans are also available and may be used to create this cake.

Frost the top and sides of the cake with white or pale pastel buttercream icing. Smooth the icing with a knife dipped in very hot water to create a flat surface. Use one color of the decorating icing to create several stripes of icing side to side across the egg, spread apart at nice intervals. Use the second icing color to create small polka dots, squiggles or other designs in some of the sections created by the first color's stripes. Use small jelly beans or other small Easter candy to create a few more decorative stripes across the egg.

Place 2 cups of shredded coconut in a large plastic bag. Put several drops of green food coloring into the bag and seal it. Shake vigorously until the coconut is dyed green, adding more food coloring if necessary. Sprinkle the green coconut around the base of the egg cake.



Bunny Cake

What you need:

- 2 round cake layers

- 3 cups of pink buttercream icing

- 1-2 colors of decorating icing

- Pink jelly beans, small gumdrops

- Sprinkles or decorating sugar (optional)

To make a bunny cake, start with 2 round cake layers. One layer will be used to make the bunny's head. The second layer is cut to make the bunny's ears and a bow tie. Dense cakes such as pound cake are the easiest to cut into shape and decorate.

Cut one layer into two ears and a bow tie. Make the first cut starting at approximately ten o'clock, arcing downward and then back up to two o'clock to make the first ear. Make another cut starting at approximately eight o'clock, arcing upward and back down to four o'clock to cut out the second ear. The remaining piece will be the bow tie. The cuts will roughly matching the stitching pattern on a baseball.

Lay the cake for the bunny's face out on a tray, putting the bowtie below the face and the ears above it. Ice the entire cake in pale pink pastel icing. Use decorating icing to create a nose, mouth and whiskers and to outline the bow tie. Fill the center to the ears with pink jelly beans or decorating icing. Use black jelly beans or gumdrops to create eyes for the bunny. Fill the bow tie with sprinkles.

Basket

What you need:

- 2 round cake layers

- 2-3 cups of pastel buttercream icing

- 1-2 colors of decorating icing

- Small jelly beans

- Small to medium chocolate Easter bunny

- Heavy gauge floral wire, 2 feet

- Long red licorice strings, several

- Shredded coconut

- Green food coloring

To create a festive Easter basket cake, start with 2 round cake layers. Use a paper pattern to cut a 5-inch diameter circle out of the center of one of the layers so it resembles a donut.

Frost the uncut round layer and place the round layer with the cutout circle on top of it. Frost the exterior of the entire cake in the pastel color of your choice. If you are feeling ambitious, use decorating icing and a basket weave tip to create a woven texture on the exterior of the basket.

To create the basket's handle, bend the floral wire into an arch. Wrap the licorice laces around the wire. Secure the handle into the cake to arc across it. Use decorating icing to create small frosting "bows" at the base of each end of the handle.

Place 1 cup of shredded coconut in a large plastic bag. Put several drops of green food coloring into the bag and seal it. Shake vigorously until the coconut is dyed green, adding more food coloring if necessary. Fill the basket with the coconut Easter grass. Sprinkle jelly beans on top of the grass and add the chocolate bunny.
