CHICKEN, PASTA, SAUCE"¦ GO!

Leftover chicken is incredibly versatile. There are so many flavor combinations that chicken can be integrated into, so if you have leftovers, you should be able to figure out a way to reuse it. Be creative - let your imagination guide you. Most likely, you have a spice rack full of flavors that are just waiting to be paired with a new chicken dish! You can go with a sweeter dish by soaking the chicken in apple sauce and cinnamon sugar or you can opt for the tangy route by marinating your leftovers in Tabasco sauce and citrus flavors. Orange juice, which is usually on hand for breakfast, can add a zesty flavor to your leftover chicken as well. Here is a recipe for Leftover Chicken a la To-Mayo:

Ingredients: 3 leftover chicken breasts, pasta, 1 teaspoon curry powder, 4 tablespoons mayonnaise, 1 can of tomato soup, ½ teaspoon salt, ½ teaspoon pepper, and ½ cup milk.

Directions:

1. Cut your chicken breasts into small pieces (approximately one square inch per piece).

2. Boil water for pasta (add salt if desired).

3. Cook pasta according to package directions. Drain.

4. In a saucepan over low heat, combine tomato soup, curry powder, mayonnaise, salt, pepper, and milk. Stir occasionally.

5. Add your chicken pieces to the simmering sauce. Cover; simmer for ten minutes.



6. Remove your sauce and chicken from heat, and pour over cooked pasta.

7. Stir and serve!

LEFTOVERS, LASAGNA-STYLE!

Leftover lasagna can be transformed into a specialty plate for your family's dinner. If you have a blender or food processor, you should definitely get ready to make a masterpiece of a meal! This is truly one of the easiest dinners that you can make - from start to finish you are looking at under thirty minutes for sure. Here's a recipe for Lasagna Lover Linguine:

Ingredients: Uncooked linguine pasta (any pasta can be substituted here), leftover lasagna, ½ cup tomato sauce.

Directions:

1. Boil water for pasta (add salt if desired).

2. Cook pasta according to package directions. Drain.

3. Combine leftover lasagna and tomato sauce in a food processor and blend until thoroughly combined. Do not blend too long - you want the result to be a thick consistency, not thin.

4. Heat your lasagna-sauce mixture in a saucepan over low heat.

5. Pour lasagna-sauce over your linguine and serve!

MISH-MASHED POTATOES

Mashed potatoes make for a delightful leftover dish. If you simply want to use them again in their original form, just add a little milk, heat in a saucepan, and fluff with a fork. If you have some leftover (or fresh) veggies and meats, you can whip up some mouth-watering Mish-Mashed Potatoes. Here's how:

Ingredients: 2-3 cups leftover mashed potatoes, ¼ cup milk, leftover cooked steak (any meat can be substituted here), 1 cup broccoli florets, ½ cup shredded cheddar cheese, ½ cup sour cream, 2 tablespoons chives.

Directions: Combine all ingredients in a large pot on the stovetop. Cover the pot, and heat on low for 30 minutes, stirring occasionally.
