Engineered would be essentially the same process, but instead of using bamboo from top to bottom, making it a "solid bamboo floor", you would use other materials for the backing and the middle of the material. Typically engineered bamboo floors are used to allow them to go over radiated heat for example. You can't put solid bamboo over radiated heat but you can put in a properly engineered bamboo floor for radiating heat.
Bamboo in general can be used over wood or concrete subfloors, above or below grade in most cases, as long as there's not a moisture situation over concrete. That's going to include all of your general rooms: living room, dining room, hall, kitchen, family room, even bedrooms and stairs. It's very versatile in that respect. The limitations I tend to put on bamboo floor is in bathrooms or in wet areas like a laundry room. These are heavily wet areas compared to a kitchen, which is more of a lightly wet area.
