A creamy take on the gelatin dessert, this java bavarian recipe is flavoured with banana and a cup of strong coffee like espresso.
1 tablespoon plain gelatin
1/2 cup milk (may be rice, potato or nut milk if preferred)
1 cup hot strong coffee (like espresso)
1/3 cup sugar
1/8 teaspoon salt
1 teaspoon rum flavouring (optional GFCF Vanilla can be used instead)
1 cup heavy Nutriwhip (whipped) or CF topping like cool whip
1 ripe banana, diced
1/2 cup chopped nuts (pecans, walnuts, almonds, hazelnuts)
Soften the gelatin by sprinkling it over the milk and leaving to stand for 5 minutes. Add the coffee and stir until the gelatin is complete dissolved. Add sugar, salt, and flavouring. Chill just until it is starting to thicken. Fold in the remaining ingredients. Return to the fridge and allow to set until firm.
