Italian Primavera Salad recipe With Homemade Dressing peppers eggs peas potatoes green beans artichoke hearts and much more.

For this recipe you will need the following ingredients:

3 pounds shelled baby peas.

5 small new potatoes

2 cups of diced green beans

1 package artichoke hearts

3 cups of olive oil

1/3 cup of lemon juice

2 tsp pepper

2 tsp salt

3 egg yolks

2 tbls fresh tarragon leaves chopped finely

2 tbls cider vinegar

2 tsp English mustard (dry)

2 Cucumbers sliced thinly

Cook all the vegetables except cucumbers separately until they are tender. Drain them and let them cool. Cut the potatoes after peeling into fifths and cut the artichoke hearts into thirds.

Next place all vegetables except cucumbers in bowl and toss with lemon juice, 1 ½ cups of olive oil and pepper and salt.

Now place this mixture in the refrigerator for two to three hours so all the veggies and seasonings can blend together. While this mixture is chilling began preparation for the dressing.



Take the egg yolks and all the other ingredients except the oil and place in a mixing bowl and beat them steadily while dropping some oil slowly into the mixture until all the oil has been incorporated into the mixture. This mixture should become fluffy and thicken up also.

Once your salad mixture is chilled put in bowls to serve and garnish each one with slices of cucumber and dollops of the dressing.

This should serve 10.
