This is a small collection of recipes for vegetables that are different, tasty, and nutritious.
Vegetables are the edible parts of garden plants. There are three general classes of vegetables for cooking these are fresh, dried, and canned. The most common methods of cooking vegetables are boiling, steaming, baking or frying. Below is a small collection of different and healthy vegetable recipes.
Black eyed Peas and rice
1 16 oz can black eyed peas
2 cups quick cooking rice
2 cups water
1 tablespoon butter
1 teaspoon salt
1/2 pound bacon cooked to a crisp
1/2 teaspoon basil
1/4 teaspoon Ground Mustard
1/4 teaspoon ground bay leaf
Directions:
Boil two cups water with 1 teaspoon salt and one table spoon butter. Then place 2 cups rice in boiling water remove from heat and cover. Let stand until water is dissolved. Then pour can of black eyed peas in with rice, add crumbles bacon, basil, ground mustard and ground bay leaves. Stir and reheat for ten minutes until beans are hot. Then serve with rest of meal.
Baked sugar carrots
2 carrots
1/2 cup water
3 tablespoons brown sugar
1 teaspoon mace
Preheat oven to 375F.
Peel and slice carrots. Place carrots, water, brown sugar and mace in glass baking dish. Bake at 375F, for 20 to 25 minutes until carrots are tender. Then serve with rest of meal.
