Fast And Easy Family Recipes: Wheat-Free Baked Fruit Pudding Recipe

Wheat free recipes! A delicious combination of juice, spices and fruit made wheat-free with the use of prepared rye crackers.

(not Gluten Free)

10 rye wafers (like Wasa or Rye Crisp)

3/4 cup pineapple juice

2 teaspoons lemon juice

2 tablespoons brown sugar

1/8 teaspoon cloves

1/4 teaspoon cinnamon

1/8 teaspoon nutmeg

1/4 cup seedless raisins

Place rye crackers into a ziplock bag and seal it. Crush the crackers into coarse crumbs. You can also use a food processor to do this. Mix with all the other ingredients. Pour into a greased baking dish and bake at 350 degrees for about 1 hour. Serve hot or cooled. A sweet fruit sauce or a sugar sauce tastes good if served overtop.

If you prefer, instead of baking, this pudding may be steamed for about 90 minutes.
