This features hot bamboo shoots smothered in a cinnamon syrup. This recipe is great served with a chicken or vegetable stir-fry.
Serves 4
INGREDIENTS:
2 tbsp. butter, melted
2 tbsp. ground cinnamon
1/2 tbsp. brown sugar
1 tbsp. unsweetened pineapple juice
3 cups bamboo shoots
METHOD:
In a pan add butter, cinnamon, brown sugar and pineapple juice. Heat gently until sugar and butter have melted. Stir constantly.
Add bamboo shoots. Coat thoroughly and heat for another 4 minutes. Serve immediately with a chicken or vegetable stir fry with cinnamon syrup spooned over the hot bamboo shoots.
