Fast And Easy Holiday Recipes: Potato And Lemon Salad Recipe

Try this great salad recipe with potato, lemon, field herb and olives.

750grams baby potatoes, scrubbed and boiled until just tender

150 grams black olives, stones removes

2 small lemons,, pith removed and segmented

A handful of freshly stripped lemon thyme

100grams mayonnaise

Crushed black pepper

Salt

4 tablespoons freshly squeezed lemon juice

Mix all the ingredients together carefully with a large spoon. Leave in the refrigerator for 24 hours to allow the flavors to develop, stirring now and then allow to return to room temperature before serving.
