This tasty chilled salad recipe features grilled garlic and creamed cheese on a bed of rocket lettuce. It's great with crudites or crackers.
Serves 4
INGREDIENTS:
4 fl.oz. sunflower oil
8 cloves garlic, quartered
1 tbsp. red wine vinegar
1 bunch parsley, finely chopped
1 tsp. salt
1 tsp. black pepper
4 oz. creamed cheese
8 Rocket lettuce leaves
METHOD:
Coat 3/4 garlic in sunflower oil. Put on a silicon paper lined cookie sheet. Grill for 8 minutes until starting to go medium brown.
Using a food processor, combine grilled garlic, red wine vinegar, parsley, salt and pepper and creamed cheese until smooth. Spoon garlic cheese onto a bed of lettuce. Serve chilled as a dip for crudites or a spread for crackers.
