Tropical drinks are always in style, but are especially popular during the summer months. Serve these drinks at your next luau, barbecue, beach or block party. These drinks are also great to serve at showers, reunions or just casual get-togethers.
To really get into the tropical spirit, serve these drinks in fancy glasses garnished with umbrellas, strawberries or both.
*Ambrosia Punch*
20 oz can crushed pineapple, undrained
15 oz cream of coconut
2 cups apricot nectar, chilled
2 cups orange juice, chilled
1-1/2 cups light rum
1 liter club soda, chilled
In blender, puree pineapple and cream of coconut until smooth. In a punch bowl, combine the pureed mixture, apricot nectar, orange juice and rum. Mix well. Just before serving, add club soda and serve over ice.
A Day at the Beach
1 oz Malibu rum
1/2 oz Amaretto
4 oz orange juice, unsweetened
1/2 oz Grenadine
Shake rum, amaretto, and orange juice with ice. Pour into a highball glass half filled with crushed ice. Top with grenadine. Garnish with a pineapple wedge and a strawberry.

*Bailey’s Coconut Frappe*
2 oz Bailey’s Irish Crème
1 oz Malibu rum
2 oz milk
Shake or blend until frothy; pour over ice and garnish with toasted coconut.

*Blue Hawaiian*
1 oz light rum
1/2 oz Blue Curacao
1 oz Pineapple juice
1 oz Cream of Coconut
1 tsp Sugar
Mix all ingredients in a shaker half filled with ice cubes. Strain into an old fashioned glass half filled with crushed ice. Decorate with a paper umbrella and strawberries or a slice of pineapple.

*Caribbean Cosmopolitan*
2 oz Malibu rum
1 oz Grand Marnier or Triple Sec
Splash of Rose’s Lime Juice
Splash or Cranberry juice
Pour ingredients in shaker with ice and shake hard. Strain and serve in chilled martini glass with lemon twist.

*Drink of the Gods*
2 oz vodka
1 oz blueberry schnapps
1 oz pineapple juice
Pour all ingredients in a shaker, shake and pour into an old-fashioned glass filled with ice.

*Florida Freeze*
1-1/4 oz dark rum
1-1/4 oz cream of coconut
2 oz pineapple juice
1 oz orange juice
6 oz crushed ice
Place all ingredients in a blender and blend until slushy. Pour into a hurricane glass and garnish with an umbrella.

*Frozen Margarita*
3 oz tequila
juice from two freshly squeezed limes
1/2 cup crushed ice
two lime slices
Coarse salt
Rub rim of cocktail glass with a lime slice, then dip rim into salt. Toss tequila, lime juice, and ice into blender. Blend on high until smooth. Pour into cocktail glass. Garnish with remaining lime slice.

*Hawaiian Highball*
3 oz Irish whiskey
2 tsp pineapple juice
1 tsp lemon juice
Club soda
Combine the whiskey with the juices. Add ice and slowly fill the glass with club soda. Stir gently.

*Island Ecstasy*
1 oz Pineapple liqueur
1/2 oz Peach schnapps
1/2oz Vodka
orange juice
Mix pineapple liqueur, peach schnapps and vodka in a glass filled with ice. Fill with orange juice and garnish with a pineapple wedge.

*Key West Lemonade*
2 oz vodka
2 oz sweet and sour mix
Splash of Sprite or 7-Up
Splash of cranberry juice
Mix vodka and sweet and sour mix, then add Sprite or 7-up and cranberry juice. Pour into a tall glass filled with ice and garnish with lemon slice.

*Lava Flow*
1 oz Light rum
1 oz Malibu rum
2 oz Strawberries
1 Banana, ripe
2 oz Pineapple juice unsweetened
2 oz Coconut cream
In a blender, puree strawberries and two rums until a smooth paste forms. Pour the paste into a hurricane glass. Rinse the blender and add banana, coconut cream and pineapple juice and blend until smooth. Pour banana mixture strawberry paste slowly.
The strawberry/rum mix should creep up the sides of the glass to make a wonderful looking (and tasting) summertime cocktail.

*Mai Tai*
1 oz light rum
1/2 oz dark rum
1/2 oz Triple Sec
1 oz lime juice or lemon juice
1 oz pineapple juice
2 oz orange juice
Splash of grenadine
Shake all ingredients except the dark rum into an old-fashioned glass filled with crushed ice; top with 1/2 fluid ounce of dark rum.

*Piña Colada *
1-1/2 oz light rum
1-1/2 oz coconut cream
1-1/2 oz crushed pineapple
4 oz crushed ice
orange slice
pineapple wedge
cherry (or strawberry)
whipped topping (optional)
Toss rum, coconut cream, crushed pineapple, and ice into blender. Blend on high until smooth. Pour into chilled cocktail glass. Top with whipped cream. Garnish with orange slice, pineapple wedge, and cherry or strawberry.

*Strawberry Daiquiri*
2 oz White Rum
1/2 oz Cointreau
6 Ripe Strawberries
1 oz Lime Juice
1/2 tsp superfine sugar
Blend all ingredients together until strawberries are ground. Add two cups of ice and blend until smooth. Pour into a glass garnished with a cut strawberry pierced with a tropical umbrella.

*Tequila Sunrise*
2 oz tequila
4 oz orange juice
3/4 oz grenadine
Mix tequila and orange juice in a shaker; pour into a highball glass filled with ice. Pour grenadine in slowly so it floats on top.
